The main ingredient needed is 500gm of Yellow Noodle - blanched in hot water
The other ingredients needed are divided as follows:
Ingredient A
1 cup chilli paste fried with ½ cup of oil until cooked
Ingredient B
1 potatoes - half-boiled, fried and sliced to 1cm thick
2 tofu - fried and cut into eight each
2 shrimp fritters (or nugget?) - cut into small pieces
2 tomatoes - cut into four each
1 cup cabbage - thinly sliced
Ingredients C
8 medium size prawns - removed the head and left skin at the tail only.
4 cloves garlic, finely chopped
1 onion finely, chopped
2 tbsp of oil for frying
Ingredients D
3 tbsp Oyster Sauce
3 tbsp Tomato Sauce
2 tbsp chilli sauce
2 tablespoons squid sauce
¼ cup water
½ tablespoon soy sauce
Ingredients E
2 eggs
1 cup bean sprouts
¼ cup ground nuts - heat in the pan without oil
Ingredients F
Chili for garnishing
This is how it is done:
1. First heat a bit of oil over a low heat and saute shrimp with onion and garlic until fragrant. Add chilli paste and oyster sauce, tomato sauce, chilli sauce, squid sauce, water and soy sauce. Saute until thickened.
2. After that, add tofu, potatoes, shrimp fritters, tomatoes and cabbage. Stir well and add the yellow noodle and bean sprouts, stir again. Finally, add the eggs one by one. Stir until dry and the beans while flipping the noodles.
3. Mamak Noodle is now ready to be served.
