The ingredients required are:
1 packet Spagetti
500 gm fresh sardines
3 tbsp curry fish powder
2 tablespoons dried shrimp (blended until smooth using a dry blender)
5 cloves shallots
3 cloves garlic
1 inch ginger (blended with shallots and garlic until smooth with a bit of water)
1 cup coconut milk
2 tablespoons kerisik or roasted coconut paste
1 tbsp chilli paste
Oil for frying
6 pieces of dried tamarind
Adequate water to boil fish
A bit of sugar and salt
Ingredients for salads:
1 bunch green beans
1 cucumber thinly sliced
Shrimp Paste sambal
1 bunch laksa leaves (thinly sliced)
1 ginger flower (slided)
1/2 cup bean sprouts
2 calamansi
1 onion (thinly sliced)
1 red chilli (finely chopped)
Directions
1. First boil the water, add a bit of cooking oil and boil the spaghetti until it’s tender and drain it.
2. Then boiled the fish with tamarind until cooked. Separate the bone and fish meat. Blend until smooth with the fish broth mixture.
3. After that, heat the pot. Pour a bit of oil for sauteing, add onion, garlic and ginger that has been blended earlier. Stir until it slightly crispy, add curry fish powder, fish broth, chili paste and dried shrimp that has been blended. Stir it together and add a bit of water if it is too dry
4. Next add coconut milk, coconut paste, tamarind, salt, sugar, fish meat (or fillet?), laksa leaves and ginger flower. Let the soup boil for a while or until thickened.
5. Serve the boiled spaghetti in a bowl with the gravy and salads that have been finely shredded. Laksa Johor is ready to be served.
