Ingredients
1 fish head
3 cloves shallots (sliced)
3 cloves garlic (sliced)
1 inch ginger (sliced)
2 onions (sliced)
1 curry leaves
1 tsp mixed fenugreek
100 grams of curry powder
1 tbsp tamarind juice
1 cup coconut milk
3 lady’s finger (or okra)?
1 tomato
2 green chillies
2 red chillies
oil for stir frying
1 liter of water
Directions
1. First heat the oil in a pan, add the shallot, garlic, ginger, onion, curry leaves and fenugreek. Stir until crispy
2. Then add the curry powder that has been mixed with a bit of water
3. Next add the tamarind juice and water to a boil
4. After that, put the fish head, okra & tomatoes
5. When the fish head is almost cooked, add coconut milk, green chili, red chili, salt and sugar. Leave to boil and cooked.
6. Fish head curry is ready to be served.
